At Meritage, we built a restaurant around Minnesota seasons — farmers, fishers, and producers we can name because we talk to them every week. Fine dining should not feel distant from the place it sits in. We care about Saint Paul by putting local agriculture on the plate, training the next generation of hospitality workers, and creating a room where a special occasion also supports the regional food economy.
